I’m curious if this is a well trod theme.  When coming up with ideas I often feel like something is obvious to me and must have been done before.

This doesn't mean no one would ever use again. A publisher who's never such a theme (or hasn't in a long time) might welcome it, especially if you use different themers than have been used for this theme previously.

Using this tool it looks to me like a couple of the puzzles I’ve submitted already are pretty original themewise,

Using anagram solvers have really helped me in the exact same scenario just like yours.
